General Summary: Responsible for overall generation and management of

PMI Entertainment Group's food and beverage operations for the

multi-use complex. This includes revenue maximization, cost of sales and

expense control. Drives food and beverage offerings to host events from

receptions to corporate meetings and banquets to trade shows, concerts,

sporting events, and other entertainment. Job Duties: Demonstrates and

embodies the PMI Entertainment Group Culture and Customer Service

values. Communicates and promotes PMI's culture and values; Provides

hands-on leadership and direction to department staff; Serves as a

leadership role model and creates an exceptional employment experience

for PMI's staff. Maximizes PMI's revenue and operational excellence

through implementation and oversight of systems and policies.

Contributes to the efficient operation of the business unit by

partnering with all levels of management. Monitors and ensures all

aspects of operations are completed in an efficient and effective

manner. Develops and implements business strategies for enhancing

operations and for driving and maximizing revenue through implementation

and oversight of systems and policies. Creates an environment where

exceptional service quality and well-executed patron experiences are

delivered to each guest, supporting PMI's goal of exceptional customer

satisfaction. Initiates action plans relating to food and beverage

service, standards, supply management, and sanitation compliance. Owns

oversight of food and beverage concepts to include design, branding,

physical layouts, proposed capital expenditures and initiative

development/deployment. Directs and provides proper oversight to ensure

proper financial success in the areas of revenue goals, managing

expenses, controlling labor costs, and guest satisfaction. Maintains and

strengthens vendor relationships; partnering with vendors to grow food

and beverage revenue while ensuring relationships remain positive,

productive, and profitable. Monitors and confirms that negotiated

pricing is honored. Presents creative and market driven menu items and

concepts to ensure operation is kept fresh and on leading edge of

industry standards and trend. Consistently upgrades food quality,

beverage service, product, efficiency, and presentation. Partners at a

strategic and operational level with marketing, sales, and catering to

expand brand awareness and reputation while driving revenue. Drives the

necessary staffing levels, food and beverage cost controls, and payroll

compliance to maximize profit and expected levels of service. Remains

current with industry developments and competition. Reviews and analyzes

budget and financial reports, monitors performance, addresses concerns,

and initiates action plans. Complies with federal, state, and local

health and sanitation regulations and department sanitation procedures

as evidenced through local health department and third-party audits.

Actively encourages direct report team to leverage enterprise and

organizational resources to drive better customer experiences, value,

and satisfaction. Oversees and facilitates attainment of team goals and

objectives. Supports training, development, and other professional

growth opportunities; manages individual and team performance through

coaching, feedback, and performance management discussions. Performs all

other duties as requested. Responsible for following, observing, and

participating in all company related safety programs, procedures, and

training as well as reporting potentially unsafe conditions. Maintains a

neat, clean appearance and courteous communication with business

Contacts And Public. Qualifications Knowledge, Skills And Abilities

Require : Knowledge of F&B Management or Business Management at a level

normally acquired through completion of a bachelor's degree in a

related field. 4-6 years of previous leadership experience in a complex

food service environment. Significant expertise in food and beverage

management with emphasis in a high stress, fast-paced environment. Up to

date certifications for safe food handling and responsible alcoholic

beverage service. Demonstrated financial acumen with strong background

in P&L management; experience developing operating budgets, and

established history of meeting or exceeding established financial

objectives. Exceptional computer skills and familiarity with POS

systems. Excellent interpersonal skills to effectively communicate

to set priorities and the ability to effectively schedule time and meet

deadlines. Must be available to work some nights, weekends, and early

mornings based on Company event schedule. Must be able to operate a

computer and standard office equipment such as calculator, copy machine,

laminator, etc. Other Expectations: Ability to give, receive and analyze

information, formulate work plans, prepare written materials, and

articulate goals and action plans. Requires public contact and excellent

interpersonal skills. Must be mentally adaptable and flexible in dealing

with daily workload and a variety of people. Frequent mobility and/or

sitting or standing required for extended periods of time. Requires

eye-hand coordination and manual dexterity sufficient to operate a

computer and standard office equipment. Requires hearing within normal

range and eyesight correctable to 20/20 to read communications, reports,
